Today i had these overripe bananas again, so i got to work to make a loaf of tasty banana bread and I thought to myself, why not try this one in the air fryer?
And yes! We have a winner!
I am using an XXL aero fryer from the brand Princess here. Which I am very happy about! This has more than enough capacity, does what it should and a very nice bonus is that it is very affordable. We even like to take it with us, when we rent a vacation house on a holiday or go camping in the van.
Ingredients:
3 eggs
4 ripe bananas (the riper, the better)
125 g oat flour
25 g vanilla protein powder
1 tbsp pb powder (peanut butter powder)
30 grams of chocolate callets
1 tbsp coconut, sunflower or peanut oil.
1 tbsp honing
1/2 tsp cinnamon
Pinch of salt
Directions:
Take 2 mixing bowls and combine all the dry ingredients (except the chocolate) and stir.
In the other bowl, mash 3 bananas and add the eggs, oil and honey to mix well to a smooth batter.
Finally, add the chocolate and fold well.
Spray an air fryer baking pan with the fat and pour in the batter.
Cut the remaining banana in half and place on top of the batter, press lightly into the batter.
Bake at 150 ° C for 10 minutes, followed by 10 minutes at 120 ° C, and finish with 15 minutes at 100 ° C.
