Easy to make in advance, so you can eat them, on the road, at work or you name it..
Ingredients:
6 muffins:
2 Ripe bananas.
2 eggs
100 g oat flakes.
100 ml unsweetened almond milk.
50 g Vanilla or chocolate protein powder.
1 tsp baking powder.
1-2 tsp cinnamon.
10 g (beekeeper) honey or other sweetener. (Optional).
1 Pinch of salt.
10 g fondant chocolate (drops or chopped).
Optionally you can add peanut butter or nuts.
Directions:
Preheat the oven to 180-190 degrees.
Mash the bananas.
Put these together with the eggs, milk, oatmeal, protein powder, baking powder, honey, salt and cinnamon, in a bowl and mix untill smooth (you can decide how smooth you want the batter).
Divide the batter over cupcake or other small baking tins and divide the chocolate, peanut butter or nuts in equal parts and press it into the bottom of the batter.
Bake for 25-30 minutes until golden brown.
If cooled down they are ready to enjoy!
