Here we go on a Mediterranean / Portuguese journey while enjoying this sandwich. Taste is an understatement in this dish, filled with shrimps, many tasty vegetables and spicy herbs! If you prefer to leave out the baguette to save some carbs, you can! Replace the baguette with a whole grain toast, this will save you a lot of calories and carbohydrates, but I wouldn't just eat it like that, the flavors could be a bit too strong if you didn't combine it with something like bread. I left the choice of amounts of ingredients to yourself in this recipe. Don't like to eat shrimps? Then you can replace this with chicken.
Ingredients:
Baked baguette.
Fish stew:
Scampies
Garlic clove.
Shallot or onion.
Fresh bell pepper.
Mushrooms
Kidney beans
Cheddar cheese.
1 tsp Mexican spice mixture.
1 tsp Cumin
2 tbsp Paprika powder.
1 tsp Cayenne powder.
Pepper and salt.
2 tbsp Olive oil
Juice of half a lemon
Toppings:
Cucumber
Tomato
Jalapeños
Coriander or parsley.
Spring onion.
Dressing:
Tartar-tzatziki (You can find the recipe in my blog.)
Directions:
Clean the scampis. (Peel and devein them.)
Crush a clove of garlic and chop the shallot or onion.
Cut the bell pepper and mushrooms into slices.
Put everything in a baking dish together with the herbs and olive oil.
Let this marinate for at least 30 minutes in the refrigerator.
Cut the remaining vegetables and set aside.
Cut the baguette in half and sprinkle with cheddar cheese.
Preheat the oven to 200 degrees.
Place the baking dish in the oven and bake for 5 min, now add the kidney beans to the mixture and then reduce the oven to 180 and continue baking for 8-12 min.
Place the baguettes in the oven until cheddar has melted.
Garnish the baguettes.
