Ingredients:
Tuna salad with mango.
Mixed lettuce.
Arugula.
3 colors quinoa.
Chickpeas.
Yellow carrot, bell pepper and zucchini.
Canned tuna. (In water).
Mango
Cilantro and black sesame seeds.
Olive oil, lemon juice.
Pepper and salt.
Directions
Rinse the quinoa until the water is clear, bring the quinoa to boil. (1 part quinoa + 2 parts water).
When the quinoa is cooked, set it aside and let it cool.
Drain the chickpeas and tuna.
Cut yellow carrot, bell pepper and zucchini and fry them in olive oil (also season with salt and pepper).
Add the chickpeas for the last 2 minutes and let it cool.
Cut the mango into cubes (or buy them pre-cut).
Top a plate with the mixed lettuce and arugula and quinoa first. now add the warm vegetables. T
hen the tuna and mango.
Finish with coriander and black sesame.
Sprinkle with olive oil and lime juice.
Season well with salt and pepper.
Ready!
