I'm actually not such a big omelette lover or mostly not typical western omelets.
But compared to the Thai omelets.. my all time favorite since my childhood!
In Thailand they are eaten as a side dish with steamed rice.
The ingredients of the basic recipe:
Eggs
finely chopped garlic.
Cut in half shallot rings. (Or spring onion).
Splash of Asian fish sauce.
Grinded pepper.
(Optional coriander).
Directions:
Beat the eggs with the fish sauce and pepper.
Fry garlic with shallot.
Add eggs
Sprinkle with filling of your choice.
Bake 1 side golden brown and fold double.
In this version i added an extra egg white here, fresh spinach and cottage cheese to add extra protein.
