You can easily put a healthy lunch on the table with a poké bowl.
Choose a base and build your bowl with your favorite vegetables, fruits, proteins and toppings and a fresh dressing.
I like to marinate the rice or quinoa that I use as a base.
Ingredients:
2 servings of rice or quinoa:
3 tbsp rice vinegar.
1 tsp Japanese soy sauce.
1 tbsp light mayo (D&L - 80% fat)
Dressing:
5 tbsp Rice vinegar.
5 tbsp Japanese soy sauce.
2 tsp Verstegen Original spice blend poke bowl.
1 tbsp sesame oil.
Lemon juice
pepper
Directions:
Put the rice in to a bowl.
Top it with diced vegetables, avocado, fruits and raw fish. You can marinate the fish in advance, but it is not a must. I personally like the pure taste of, for example, raw salmon or tuna.
Garnish with some toppings such as sesame seeds, fresh finely chopped herbs, spring onions and pour over the dressing.
