Quickly shaken from my sleeve with the leftovers from the fridge, but so delicious that I had to share it with you!
Sometimes I notice that these quick healthy dishes are very welcome to many families! For the record..
Ingredients:
1 serving:
150 g scampi (unpeeled or with tail, this gives extra flavor.)
1 large shallot.
200 g of leaf spinach
50 g Prepared brown rice (leftover from the previous day).
25 g Saveurade de Fréjus (oil and vinegar, swipe right to see which saveurade I mean.)
25 g Feta cheese.
Pepper and salt
Olive oil
(Optional)
extra garlic powder
For those who like extra spicy food, cayenne pepper.
Spring onions to garnish.
Directions:
Peel and chop the shallot.
Heat olive oil and fruit shallot together with the scampi in a deep pan.
Add the Saveurade together with the leaf spinach.
Now add salt and pepper and optional extra garlic powder.
Place a lid over your pan to cook the spinach.
Shovel after 2-3 minutes and add the rice.
Put everything on a plate.
Finish with crumbled feta cheese and possibly some cayenne pepper and stir well.
Simple and delicious!
