Creamy scrambled eggs with grilled asparagus

Ingredients

(per serving)


  • 200g white asparagus

  • 1 egg 50g cottage cheese

  • 1/2 tbsp olive oil

  • 1 tbsp finely chopped parsley

  • 1 tsp lemon juice

  • Salt and pepper to taste


Instructions

  1. Peel off the skin of the asparagus with a peeler and cut off the bottom (the hard stem) of the stalks.

  2. Bring a medium-sized pot of water to a boil and add a pinch of salt. Add the asparagus to the boiling water and let it cook for about 5-6 minutes, or until it's tender but still firm.

  3. Drain the asparagus and let it dry on paper towels.

  4. Meanwhile, heat a grill pan and grill the cooked asparagus on both sides.

  5. Heat a small pan with some olive oil over high heat. Add the egg, cottage cheese, and lemon juice, and reduce the heat. Stir with a whisk until scrambled eggs are formed on low heat. (The cooking time depends on the desired consistency of the eggs.)

  6. Place the asparagus on a plate and top it with the scrambled egg mixture. Garnish with finely chopped parsley and season with salt and pepper to taste.

Grill the asparagus in the oven if you don't have a grill pan or skip this step.


Tip: Add peeled north sea shrimps or cooked (defatted) ham for a lean higher protein meal.
